As a counter attack of Santiga Seafood (oops sorry Lel :D), the coming profile is considered as the "local's favorite", and, okay it is time to reveal the truly and solemnly mean of delicious, It is called by “Kepiting Surya”, situated in the city centre of Makassar whereas precisely located in its most happening “Panakukang” Mall (top level). Surya Restaurant is actually specialised in “halal” Chinese food where people who visit here mostly go for its "black paper crab" (kepiting lada hitam).

No doubt on the freshness of its material, the crab, as inquired, is taken from Kalimantan, and hell-yeah, the size matters here :). Let me accordingly tell you why they use Kalimantan crab, instead of Javanese or (even) Sulawesi ones. It's because the way they cook is required so, why? The crabs should be initially steamed using a massive temperature before they are cooked with the desired sauce. The Kalimantan ones are well-known of its tough (or you might say) flexible texture of its meat, whereas the others are not as tough as this one. They (the restaurant staffs) are however agreeable that the javanese ones have the softer meat if they are cooked in a different way.

A full plate of surya crab prices at Rp160,000 (USD17) (quite expensive for Indonesian pocket, eh?).
